Classic Greek Salad

The thought of chocolate dessert made me so guilty, I made salad instead 🙂 I do have all the ingredients on hand and the dark chocolate is calling my name from the shelf drawer but it’ll have to wait.

This salad has slowly found its way into my day to day routine and I almost make it every week in one form or another. This morning, however I had everything to put together the classic salad, which meant 30 minutes of extra sleeping time (early morning sleep is the best sleep of all ….. anything to catch a few more minutes of it :))

So here its goes …..

Ingredients (Dressing):
2 tblsp Red wine vinegar
3 tblsp olive oil
2 tblsp lemon juice
2 tblsp oregano
Salt and pepper

Ingredients (Salad):
1 head of Lettuce (romaine) – roughly chopped
1 cup cherry tomatoes – halved
1/2 cup black olives
1 medium cucumber – chopped
half a red onion – thinly sliced (i skipped onions this time, had a meeting right after lunch :P)
3 tblsp Feta cheese – crumbled

Method:
1. Mix all the ingredients of the dressing in a bowl. Add the sliced onion and let it stand for 15 minutes while you prepare the rest of the ingredients.
2. In a mixing bowl, add the lettuce, tomatoes, cucumbers, olives (and anything else you would like in your salad, I had some baby corn which I added too …. although its not a greek salad member)
3. Drizzle the dressing, mix the salad. Add the feta and serve!
