Paneer Tortillas with Minty Yoghurt

This is a quick snack that can be whipped up quickly from any leftover chunky curry and some yoghurt. I had some paneer masala on hand which I used as a topping here. But you can use anything from fried tofu to chicken tikka, to mixed veggie dry curry – just about anything.

The yoghurt mixture is a simple blend of whipped yoghurt, chopped cucumber and chopped mint. Season with salt/pepper.

Top everything on your favorite tortilla chips and voila! you have a nice filling snack 🙂
