Coconut Chicken & Mushroom Soup
Have I ever mentioned, how much I love soups!! Hot, steaming, spicy soups – warm covers, a gripping episode of Criminal Minds and a hot soup! What more could you ask for? Well of course there is this need to have the BH by my side having his own bowl of soup too … anyways … “woh bhi hoga thoda intezaar kar le”. This is a line from one of those old disco-type songs from Saheb (Anil Kapoor/Amrita Singh dancing on an empty road) – Yaar bina chain kahan re … ohhh I just love this song. Ok back to the soup …
This is the second recipe that I tried from Basic Thai Cooking.
2 cups coconut milk
1 chicken breast cut into 1 inch slices
1 tblsp of finely sliced ginger
1 lemongrass stalk – chopped finely
2 tblsp finely chopped shallots
3 small red chillies
6-7 button mushrooms – sliced
2 kaffir lime leaves
3 tsp soy sauce
2 tblsp lime juice
Fresh cilantro for garnish
1. In a pan, bring the coconut milk to a boil. Stir continuously.
2. Add the lemongrass, ginger, shallots, chillies. Bring to a boil a second time. Reduce heat.
3. Add the chicken, mushrooms, lemon juice and soy sauce. Slowly simmer on medium heat and allow the chicken to cook.
4. Once the chicken is almost done, turn the heat off, adjust the taste with salt/lemon juice. Garnish with cilantro and serve.
