Sticky Rice with Coconut and Mango

Today is my birthday again!!! (according to our traditional calender of course, it hasn’t already been a year :)) So for the mooh-mitha (sweeten the mouth) time of the evening, I made some sticky rice dessert I read about recently. Its easy, fun to eat and with the sour-sweet taste of the mango pieces on the top, it just is the perfect combination!

Ingredients:
2 cups of sticky rice (I got the sweet rice variety from the Asian market)
1/2 can of coconut milk
1/2 cup sugar
1 pinch of salt
1 ripe mango – chopped into small or bite sized pieces
2 tblsp toasted sesame seeds (black or white)

Method:
1. Cook the sticky rice in a rice-cooker or in a pot over stove or in the microwave – whichever way you prefer.
2. In a saucepan over medium heat, add the coconut milk, salt and sugar. Let the sugar melt and blend into the coconut milk and let it simmer for a few minutes.
3. Add the coconut milk-sugar mixture to the cooked rice taken out in a bowl. Let the bowl cool for half an hour. If you like cold dessert, refrigerate it for an hour.
4. Serve into cups, top with the mango pieces and sprinkle some toasted sesame seeds
