Coconut Shrimp with Mango Dip

Since I had made a special trip to get shrimp from the Asian stores, I decided to make a couple of things …. to justify the effort 😀 I had read about this coconut shrimp recipe on Delish sometime ago and had it bookmarked. But I must say, in this recipe, I like the dip more than the shrimp itself. Man!!!! The dip is to die for! It can be used as side for any other dish too, or even with chips.

So here’s how it goes … enjoy!!

To make the dip

In a blender add the following and blend until a smooth dip like consistency
One medium ripe mango
1/4 cup vinegar
1/4 cup lemon juice
1.5 tblsp lemon zest
2 cloves of garlic
1 tblsp red chilli sauce/paste
2 tbslp mint or cilantro (as available)

To make the shrimp

1 cup all purpose flour
1 cup Club Soda
1 cup of shredded coconut or dried coconut
1 pound shrimp – cleaned and de-veined. Thaw and pat dry if using frozen shrimp

In a bowl, mix together the all purpose flour and salt. Add the club soda slowly and mix together to form a pancake like batter.
Spread out coconut in a flat dish
Dip the shrimp in the batter and cover completely with it. Roll it in the coconut and set aside on another plate

Once all the shrimp are done, you can fry them right away or refrigerate for later.

In a pot, heat oil. Once hot, turn the heat to medium. Fry the shrimp at medium flame until golden brown
Remove from oil, place on a tissue to drain off excess oil and serve hot with the dip!
