Grated Carrot Salad …

… or gajar-kachoombar. Kachoombar is actually a term used for any chopped salad (could be cabbage, carrots, cucumbers, tomatoes, etc … the regular stuff).

For me it is just a way of putting a lonely carrot in the vegetable tray to some good use before it withers away sadly 😦

1 Cup grated carrot (1-2 carrots)
1 tsp grated coconut
1 tsp oil
1 tsp mustard seeds
1 green chilly – cut lengthwise, thin

Mix the grated carrot with the coconut. (Coconut can be skipped too).
In a small tadka pan, add some oil. When hot, add mustard seeds and green chilli pieces.
Pour this hot tadka on the carrot-coconut mixture.
Add some salt, lemon juice, mix and enjoy as side with any meal.
