Chickpea salad with mango
I have a strange attraction to mangoes. I can add them in anything and everything
The juicy citrus taste makes everything taste good, whether its a chunky mango salad, or a curry with paneer and spices, or simply a milk-shake!
Here is a simple quick chickpea mango salad, which can be whipped up in minutes, and tastes awesome. Or you can simply eat it as a 3 o’clock snack
(something I cannot do without these days)
Ingredients:
1 can of chickpeas (drained and rinsed)
1 mango medium-ripe
4-5 twigs of mint (leaves chopped finely)
2 tbslp olive oil
1 tblsp red wine vinegar
1 tbslp sliced almonds (optional)
Salt
Pepper
Method:
1. In a bowl, whisk the oil and vinegar, salt and pepper. Mix well.
2. Throw in the chickpeas, mango pieces, and toss.
3. Garnish or mix in the mint and almonds
